Ingredients

  • 4 potatoes, peeled and diced into 3cm pieces
  • 10 curry leaves
  • 1 large onion, halved and sliced into rings
  • 1½ tsp black mustard seeds
  • 1 tsp turmeric
  • ½ tsp chilli powder
  • pinch of salt
  • 3 tbsp oil
  • 1 birdseye chilli, sliced

Cooking

Parboil potato pieces, drain, set aside

Fry onions until they’re fried onions.

Add to the pan black mustard seeds, turmeric powder, chilli powder, 7 curry leaves, salt.

Add potatoes, combine, fry until surface golden brown.

Garnish with 3 chopped curry leaves and sliced chilli.
