Ingredients
- 4 potatoes, peeled and diced into 3cm pieces
- 10 curry leaves
- 1 large onion, halved and sliced into rings
- 1½ tsp black mustard seeds
- 1 tsp turmeric
- ½ tsp chilli powder
- pinch of salt
- 3 tbsp oil
- 1 birdseye chilli, sliced
Cooking
Parboil potato pieces, drain, set aside
Fry onions until they’re fried onions.
Add to the pan black mustard seeds, turmeric powder, chilli powder, 7 curry leaves, salt.
Add potatoes, combine, fry until surface golden brown.
Garnish with 3 chopped curry leaves and sliced chilli.
