(Note for pedants: yes the subtitle is correct - I-Kiribati is the demonym, but Kiribati is the adjectival form.)

From Nonouti atoll in Kiribati, this is a creamy clam dish cooked cooked on an open fire. It seems like this would more correctly use Asaphis violascens, but I’m sure you can get away with any similar clam really.

This recipe is for a single serving, but is easily scalable. One coconut per person.

Ingredients

  • 1 young coconut
  • __ g clams, shelled
  • __ ml coconut milk
  • Pinch of coarse salt

Prep

Carve the coconut down to the kernel, cut off the top (keep for later), and empty the liquid

Shell the clams.


Cooking

Fill the coconut with the clams, coconut milk, and salt. Mix well.

Cook directly on a wood fire for __ minutes, with the top placed gently back on the coconut.
