Ingredients

Dough

  • 6 g dry yeast
  • 350 ml lukewarm water
  • 450 g bread flour
  • 9 g salt

Filling

  • 200 g mozzarella, coarsely grated
  • 225 g ricotta
  • 225 g feta, coarsely grated
  • 13 spring onions, finely sliced
  • 100 ml finely chopped dill
  • salt and pepper to taste

Butter

  • 70 g butter
  • 60 ml finely chopped dill
  • 4 cloves of garlic, grated
  • salt to taste

Prep

Mix yeast and water, add flour and salt, combine with a fork, then knead until smooth

Prove for 2 hours

Mix all the filling ingredients and set aside

Mix all the butter ingredients together and set aside


Cooking

Divide the dough into 8 pieces, shape into balls, roll out flat

Add the filling to the centre of each, fold the dough over it, roll gently to seal

Dry fry in a pan for 3 minutes on each side

Brush the butter on top of the bread while hot, serve immediately.
