Ingredients
Sauce
- 200 g mayonnaise
- 100 g coriander leaf
- 20 g parsley
- 1 green birdseye chilli, de-seeded
- 1 clove garlic
- 1 tbsp lime juice
- 1 tsp chilli powder
- pinch of salt
- pinch of sugar
Main bit
- 400 g chicken
- 2 avocados, mushed
- 50 g mayonnaise
- 1½ tbsp lime juice
- ½ red bell pepper, diced
- 3 shallots, finely chopped
- 10 g coriander leaf, finely chopped
- 1 birdseye chilli, finely chopped
- 2 cloves garlic, finely chopped
- pinch of salt
- pinch of black pepper
To serve
- Arepas
Prep
Blend all the ingredients for the sauce until smooth.
Cooking
Boil the chicken until it’s done (~20 minutes).
Shred the chicken, either with two forks or with an electirc whisk.
Mix with the other filling ingredients.
Serve with some arepas or tbh just some nice bread.
