Ingredients

Sauce

  • 200 g mayonnaise
  • 100 g coriander leaf
  • 20 g parsley
  • 1 green birdseye chilli, de-seeded
  • 1 clove garlic
  • 1 tbsp lime juice
  • 1 tsp chilli powder
  • pinch of salt
  • pinch of sugar

Main bit

  • 400 g chicken
  • 2 avocados, mushed
  • 50 g mayonnaise
  • 1½ tbsp lime juice
  • ½ red bell pepper, diced
  • 3 shallots, finely chopped
  • 10 g coriander leaf, finely chopped
  • 1 birdseye chilli, finely chopped
  • 2 cloves garlic, finely chopped
  • pinch of salt
  • pinch of black pepper

To serve

  • Arepas

Prep

Blend all the ingredients for the sauce until smooth.


Cooking

Boil the chicken until it’s done (~20 minutes).

Shred the chicken, either with two forks or with an electirc whisk.

Mix with the other filling ingredients.

Serve with some arepas or tbh just some nice bread.
