Ingredients

  • 2 tbsp oil
  • ½ tsp turmeric
  • ½ tsp Kashmiri mirch
  • 225g paneer/halloumi/feta
  • 250g spinach, roughly chopped
  • 1 smallish onion
  • 2 garlic cloves
  • 3cm piece of ginger
  • 1 birdseye chilli
  • ½ tsp garam masala
  • ½ lime, juiced
  • pinch of salt

Prep

Mix oil, turmeric, chilli powder, cheese.

Blend onion, garlic, ginger, green chilli, salt.


Cooking

Fry cheese mix on low heat for 5-10 minutes. If using paneer or halloumi then until golden, if usiing feta it’ll sort of melt into a goo but that’s fine. Remove cheese from pan leaving spices and oil behind.

Add onion blend to pan, low heat, 10 minutes. Add water if dry.

Add garam masala, stir, fry for 2 minutes.

Add spinach and 50ml water, fry for 2 minutes.

Add cheese, another 2 minutes.

Serve topped with lime juice.
