Chicken Shawarma
This one works really really well. It tastes exactly like kebab shop shawarma and it’s super easy: just mix some spices with some chicken and stick it in the oven. That’s all.

Ingredients
Main stuff
- 750 g boneless chicken thighs cut in half
- 2 tbsp oil
- 2 tbsp cornflour
- 1 tbsp salt
- ½ tbsp Kashmiri mirch
- ½ tbsp cayenne pepper
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground turmeric
- 1 tsp ground cinnamon
- ½ tsp paprika
- ½ tsp smoked paprika
- ½ tsp ground cloves
Sauce
- 65 ml greek yoghurt
- 2 cloves of garlic
- 1 tbsp fresh coriander leaf
- ½ tbsp lemon juice
- ½ tsp sesame oil
- ⅛ tsp salt
Prep
Blend up the sauce ingredients.
Mix cornflour, salt, and spices.
In a different bowl, mix the chicken and oil.
Combine, making sure the chicken is coated well.
Marinate for a few hours.
Cooking
Layer the chicken in a greased loaf tin and press it down firmly.
Cook in the oven for 40 minutes (160°C fan).
Leave to rest in the tin for 10 minutes.
Slice and serve with flatbreads, salad, and the sauce.
