Sopa de Ajo

Ingredients

  • 2L chicken stock
  • 120g baguette
  • 3 large eggs, beaten
  • 1 whole garlic, finely chopped
  • 7 tbsp olive oil
  • 5 tsp sherry vinegar
  • 3 tsp smoked paprika
  • ½ tsp salt

Cooking

Put bread in oven (200 fan) for ~20 minutes until almost burnt. Break into 5cm pieces.

Heat 6 tbsp oil to medium heat, fry bread for 2 minutes, turning often. Set bread aside.

Heat 1 tbsp oil to medium heat, fry garlic for 1 minute, stirring constantly.

Stir in paprika.

Add stock and salt, bring to boil.

Add bread and vinegar. Simmer on medium-low for 25 minutes. Stir occasionally to break up bread.

Bring to a simmer at medium-high. Stirring constantly, slowly pour in the beaten eggs. Serve.
