Ingredients

Main stuff

  • 1 fish, tilapia or similar
  • 1 key lime
  • 1 spring onion, finely chopped
  • 1 bunch of Thai basil leaves, roughly torn (___ g)
  • 1 banana leaf

Spices to blend

  • 10 red birdseye chillies
  • 10 Indonesian onions (3 shallots)
  • 1 clove of garlic
  • 1 cm ginger
  • 1 smallish tomato
  • 2 candlenuts
  • Salt, pepper, sugar, and chicken powder to taste

Prep

Blend up the blended bits.


Cooking

Clean out the fish, cut in half lengthways but keep it connected st the tail.

Smear with lime juice and salt, leave it for 15 minutes, rinse off.

Put the fish on the banana leaf, smear with ground spices (a bit more in the middle), sprinkle with spring onion and Thai basil.

Put the whole fish on top of the banana leaf into a frying pan. Add enough oil to just reach the fish. Fry on very low heat until cooked (can cover the pan if it’s taking too long).
