Kaukau Miksim Wantaim Susu Blong Kokonas
Yeah I mean recipes online call this one kaukau but that’s just sweet potato. I spent ages trying to find a more specific name for this dish but really couldn’t find anything, so I’ve tried to call it sweet potato mixed with coconut milk. I’ve got no idea if that’s grammatically correct, but if you know enough to help me with that then you probably also know what the dish is called, so just let me know. *Adapted from here.
Ingredients
- ~1200 g sweet potatoes, whole
- 150 g coconut cream (or the separated top layer off a can of coconut milk)
- 1 shallot, minced
- 2 cloves of garlic, minced
- 30 g coconut oil
- 2.5 cm ginger, grated
- ½ orange, zest
- ½ orange, juice
- __ g coriander leaves, roughly torn
Cooking
Bake sweet potato in foil until soft and done (~30 mins)
Slice lengthwise, scoop out the insides
Mix everything (except the coriander) with the sweet potato innards
Refill the sweet potato skins with the mixture and bake for 10 minutes
Garnish with coriander leaves
