I looked up what’s in a Lincolnshire sausage and it’s nice and straightforward, so I just mushed it all up with some pork mince to make a kind of simple sausagemeat lump. Really tasty, and it turns out it tastes exactly like the patty in a McDonald’s sausage and egg McMuffin.

Ingredients

  • 500 g pork mince
  • 100 g breadcrumbs
  • 50 ml water
  • 5 g fresh sage
  • 7 g salt
  • 3 g white pepper

Cooking

Blend up the breadcrumbs and sage

Mix everything together really well by hand

Divide into 8 lumps, then press them down into 2 cm thick patties

Fry in a little oil for 4 minutes on each side over a medium heat

Serve on an English muffin with a fried egg if you’re in the mood for that, or with a nice bit of mash and gravy.
