Welsh Rarebit
Serves 2

Ingredients
- 120 ml brown ale
- 25 g butter
- 25 g plain flour
- 150 g mature cheddar, coarsely grated
- 1 egg yolk
- 1 tbsp English mustard
- 1 tbsp Worcestershire sauce
- 2 slices of bread
Optional bonus ingredient (pick one)
- 1 tbsp chives, chopped
- 1 tsp chilli oil
- 1 tsp sesame oil
- 60 g black pudding, cooked and crumbled
Cooking
Set the ale gently warming off to the side
Melt the butter until it begins to foam
Mix the flour into the butter, whisk and cook for a minute
Whisk the warm ale bit-by-bit into that
Whisk in the cheese to make a paste
Mix in the egg yolk, mustard, Worcestershire sauce, and bonus ingredient
Toast the bread on one side under the grill (~4 minutes on high), flip over, spread sauce, grill for ~5 minutes until golden brown and bubbling
