Ingredients

Main stuff

  • 1 kg chicken thighs or legs or whatever
  • 400 ml of coconut milk
  • 100 ml of coconut milk
  • 100 ml water
  • 4 tomatoes, diced
  • 2 stalks of lemongrass, bruised

Spices to blend

  • 6 Indonesian onions (2 shallots)
  • 5 cloves of garlic
  • 3 cm ginger
  • 2 cm turmeric root
  • 2 tsp salt
  • 20 green bird’s eye chillies

Prep

Blend up the blended bits.


Cooking

Half-cook the chicken (roast, grill, whatever).

Add the 100 ml coconut milk, water, chicken, and spices to a pan and bring to a boil.

Add lemongrass and tomato, simmer for __ minutes.

Add the rest of the coconut milk, stir, cook for __ minutes until reduced a bit.
