- 1 kg chicken thighs or legs or whatever
- 400 ml of coconut milk
- 100 ml of coconut milk
- 100 ml water
- 4 tomatoes, diced
- 2 stalks of lemongrass, bruised
Spices to blend
- 6 Indonesian onions (2 shallots)
- 5 cloves of garlic
- 3 cm ginger
- 2 cm turmeric root
- 2 tsp salt
- 20 green bird’s eye chillies
Blend up the blended bits.
Half-cook the chicken (roast, grill, whatever).
Add the 100 ml coconut milk, water, chicken, and spices to a pan and bring to a boil.
Add lemongrass and tomato, simmer for __ minutes.
Add the rest of the coconut milk, stir, cook for __ minutes until reduced a bit.
